Per the request of the folks at Bud 6, here's the recipe for Diane's trail muffins;

INGREDIENTS:

2 Sticks of Butter Softened
1 Cup Light Brown sugar
1/2 cup Sugar
1 Teaspoon Pure Vanilla Extract
2 eggs
3 cups of Old Fashion Oats (Quaker)
1 1/2 cup of All Purpose Flour
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
1 Teaspoon Cinnamon
1/2 Cup of Chopped Walnuts or Pecans - (Diane used pecans)
1 Cup (or more) of Craisins (Ocean Spray)
1 12 oz Bag of White Chocolate Chips (Nestle Tollhouse)

Directions;

Preheat oven to 325 degrees
In a large bowl, mix cream butter, eggs-(one at a time), sugars, and then vanilla extract.

In a smaller bowl; mix together the oats, flour, baking soda, salt and cinnamon. Mix the dry ingredients with the wet ingredients and add the craisins, nuts, and white chocolate chips. Lay tinfoil on top of pan when baking. Bake 15 to 20 minutes. Note; Spray muffin pan with Pillsbury baking spray with flour.
