everyone remember these? well, they are easy to make actually, and yes, made with honey too!
1/2 c honey
1/2 cup sugar (you can use brown if you wish)
1 oz. almond paste
1-1/2 c powdered milk, or you can use a little cream instead, or even coconut milk

mix all except the powdered milk together in a pan and raise to 285 F, mixing constantly with a wooden spoon. let cool to 180 and add the powdered milk and mix well with the wooden spoon, pour out onto a marbled surface or something that can take the heat, and keep mixing. you want to incorporate air into it so it doesn't turn brick hard. sort of like making a taffy, but not to much air. and also you want it to solidify enough to cut it into pieces, but not enough to be solid and hard. after you do that simply wrap in wrappers and you have your bit o honey bars. like I said really easy to make. you can change this up a bit also by adding a little bit of butter, or I won;t tell if you add sesame seeds and make a bot i honey sesame bar either. you of course add the sesame seeds at the end when it is cool enough or they will burn. you can even add some peanut butter from the get go as it cooks for a honey peanut butter sesame seed taste, or just a honey peanut butter taste without the sesame.
