Hope to build a TBH soon so I can use the honey in this ancient recipe that my grandparents brought with them to the US from Southern Italy.  It was introduced there and in Sicily when the area was occupied by Middle Eastern cultures.  Its made with sesame seeds and honey and pronouced in dialect as joo joo lay:

one pound honey
one pound sesame seeds
cup chopped walnuts
zest from  one lemon and one orange
2 tablespoons sugar

stir seeds and honey continuously over med heat until the mix slow boils and seeds roast to a golden brown.  stop mixing and it will burn.
two minutes before its done (maybe 30-45 mins) mix and stir in remaining ingredients.

transfer very hot mix to a large cutting board, clean counter surface or marble slab and spread out to 1/4 inch thick

spinkle with colored non pareils while still sticky

let cool then cut into diamond shapes about an inch wide.

serve on lemon leaves or more likely waxed paper plates.
