How do you make Honey Crystals?

Just wondering what goes into making Honey Crystals.
What type of equipment do you need?

As in crystallized Honey? 

Honey does it naturally over time...Different honey, take different lengths of time.  Temperature is also an issue, I think 57° is optimal for promoting crystallization.

This is basically all creamed honey is...You take honey and introduce some "seed starter" or creamed honey to set the wheels in motion, then that desired crystal size replicates throughout the batch.

Could you use the oven or a dehydrator to do it?

evaporated-cane-juice = sugar  So that product is mainly sugar with a bit of honey in it, I thing Id rather use normal honey that's much healthier for you
