Blueberry jam
«
on:

I tried some blueberry jam with some of my excess blueberries and dark honey. I got the recipe on line and it was basically using liquid pectin rather than powder and half sugar the other half honey. The honey overpowered the entire batch and it tastes like honey with a blueberry flavour rather than the other way around. Any suggestions?

Yep set up great, all the lids sealed. The disappointment was that I wanted blueberry jam, not blueberry honey. Honey overpowered the entire flavour.

I think you've got too many blueberries in it.

Use less honey and more sugar?
