I like to sauté turtle slowly, starting with seasoning, a little butter then adding stock and other goodies. I like a thick soup & love a little shot of sherry added for good measure.

OMG I watched my first Billy the Exterminator yesterday...  He hast to be the biggest fool I have ever seen, and I hope his show doesn't last long.
