A Receipe told to me by my maternal grandfather- One beef kidney, large pot, water to cover, a pinch of salt and then

Strange foods to some people is a delicacy to others. I prefer not to eat horses, reptiles, or insects but yet I love oysters straight off the shell and fried chicken livers.
I enjoy watching the tv shows showing delicacies of other countries.

Before boiling I cut them in half and eliminate the internal pyramid-like channels.
Then wash it and cut in small pieces and fry together with the brain. The best is on toast. Seriously!

We, "uncivilized" Lakota, eat them fresh and raw... they are plenty salty enough without the "pinch of salt"...

Liver is also raw and better with a touch of gall...
