POTATO SALAD by TWT

POTATO SALAD
8 medium potatoes, diced
1 teaspoon salt
4 hard-boiled eggs, diced
3/4 cup celery, chopped
1/4 cup onions, chopped
Dressing:
2 eggs, beaten
3/4 cup sugar
1 teaspoon cornstarch
1/3 cup vinegar
1/3 cup milk
3 tablespoons butter
1 teaspoon mustard
1 cup mayonnaise
Cook diced potatoes in salted water to a firm softness; cool. Mix potatoes
with hard-boiled eggs, celery, and onions. To prepare dressing, mix tempered
eggs, sugar, cornstarch, vinegar, and milk in saucepan, and cook
until thickened. Add butter, mustard, and mayonnaise; cool. Pour cooled
dressing over potato mixture and chill several hours before serving.
