Author Topic: Barbecue Baby Back Pork Ribs  (Read 1385 times)

1 Bottle Open Pit Original Barbecue Sauce
1/2 cup chili sauce
1/2 cup ketchup
2 tbs soy sauce
1 diced small onion
1 lg clove garlic minced
1/4 cup dark brown sugar
1/2 tsp dry hot mustard (more or less to taste)
1/2 cup Buckwheat Honey (or more to taste)
Mix together, let sit 1/2 hour to blend flavors

Remove tough membrane from inner side of ribs.
I large pot add -
1 bay leaf
1 tbs ground cloves
1 tbs marjoram
2 tbs whole black peppercorns

Fill pot about half way with water.  Cut ribs into sections to fit in pot.  Bring mixture to low boil, add ribs.  Add additional water to cover until ribs covered.  Reduce to simmer, cover with lid.  Simmer until just cooked through.  Remove from pot, check ribs for clinging peppercorns and remove if found.   Place on grill (charcoal best) until BARELY beginning to brown.  Liberally baste in sauce.  Let sauce set but be careful not to burn.  Remove and serve immediately with extra sauce on the side.

Note:  This sauce because of the fresh onion and garlic does not keep well in the refrigerator.  You can freeze it, but it is best fresh.
