I love rhubarb pie, but you have to use a lot of sugar when you make it because rhubard is very tart.

The stalks look like red celery, but when you cook it, it melts into a sticky goo that is very tart. Makes a wonderful pie or we used to eat it as a dessert by itself.  Not sure how to explain to you what it taste like.

Rhubard is pretty high on the bitter scale (high in oxalic acid you know),but when mixed with a sweetener as Annette said,and maybe some strawberries too,it imparts it's own flavor. Not really describable,other than to say it tastes like rhubarb.But it is a great enhancement and complimentary flavor to many sweets.

     And they were not small pies JP. As Paul Hogan would say " You call that a pie, this is a pie". When Bud picked up the pies at the bakery I was expecting to see sort of like tarts, but Schawee has been enjoying big PIES.
