Chitlins, Cracklins, sous meat, pickled pig's feet, hog jowl, sweet meat, lights, mountain oysters.

RC, none of the good stuff is eaten from the hog these days.   I dunno    grin

Yessir, Iddee. You're right. I guess maybe it all goes into hot dogs and Vienna sausages these days.
I used to dearly love a hunk of hog head cheese on top of an oatmeal cookie and a couple of pickled eggs. Best breakfast there ever was.

I eat all of them except the pickled pig's feet... thought sweetbreads and lungs are hard to come by these days unless you butcher it yourself.  And the Cracklins, of course, require you to render lard...
