Hi all. Having just discovered my son (2 yrs) loves peanut butter on toast (even mixed with Marmite - an English obsession this stuff) does anyone have any peanut butter recipes ?

I don't have a recipe handy but if you look up "peanut butter cookies" (biscuits) you shouldn't be disappointed. (A properly made peanut butter cookie is a joy.)

I buy the already shelled and roasted peanuts at Whole Foods and make my own peanut butter.
You can either buy salted or unsalted and add your own salt to taste.
I put two cups of peanuts and 3 tablespoons of peanut oil in a food processor or blender, approx 1/4 cup of honey and salt to taste.
Just blend it up to the consitency you want and you are good to go.
You can add dried fruit or bananas or whatever else you want as well.
This makes a small batch so you have room to play with it and experiement with small batches.
You may want less oil/more oil/salt etc. so just play around with it.
It is suppose to be refrigerated if you aren't going to go through it fast because it doesn't have any preservatives but ours never lasts that long.
I love it when its still warm, I make all my own jams and breads too, I had never been a big fan of pbj sandwhiches until I started making all of my own ingredients.

You are welcome. If you have never made your own peanut butter you don't know what you are missing.
I gave it out as one of the items in my homemade gift baskets this year at Christmas and I have people literally begging me to make more for them, that and the jam.
Its easy enough for anyone to make and I told them how to do it but they would rather have me do it I guess.
I like peanut butter sandwiches with bananas sliced thinly and drizzled with honey or all of it on top of warm toast.
My kids like peanut butter on celery as a snack.
Good luck and have fun, you should make it with your son, kids have a blast seeing how the peanuts go in and turn into peanut butter.
