Apple Pudding!

Apple Pudding

1/4 C Sugar
1/4 C Honey
1 T Butter
1 Egg
1 C Flour
1 T Baking Powder
1/2 t Salt
1 C Chopped Apple
Cinnamon
Sugar

Oven to 350F.  Cream Butter, honey and Sugar.  Beat in Egg.  Mix in the rest of ingredients.  Put in buttered pie pan.  Heavily sprinkle Cinnamon and Sugar on top.  Bake for 1/2 hr.


Note: Depends on the moisture content of the apples.  You may need to bake longer.  I have used up to 2 cups of chopped apples when they are are on the dry side late in the season.  Also you can mix in chopped butternuts or walnuts if you have them.  It makes a nice breakfast or dessert.

OOhh that sounds simple and good, will have to try but use whole wheat flour instead. Always looking for quick things to do with apples I forgot I had!
