I look at various photos of hives and see that some have a right across entrance for the bees and some others have smaller spaces for the bees to enter and exit. Is the difference in size of openings got to do with weather conditions, vermin control or is this just another of the many preferences that various Beeks have?

All of the above.
It usually changes throughout the year to adjust to traffic and to robbers. It usually changes in winter also for vermin. There are many preferences from beekeeper to beekeeper.
