Who has a really good eggplant parmesan recipe?
I love it but I am the only one in the family who usually eats it so I don't bother making it just for myself, but I have decided to change that and to convert some other members in the family over to it.
However, the reason they and sometimes even I don't like it when we order it somewhere is that alot of the time its very greasy.
While some greasy foods are delicious I don't think eggplant parm is one of them.
I decided to try and find some good tried and true recipes.
The other place I go to is Allrecipes.com but I thought I would check here first.
Anyone out there have a good one I could try?

Sounds like you may need to experiment a bit Nat. I'm sure your family won't mind being guinea pigs!

I don't have a recipe, but I like tailoring things to fit my tastes. Definitely include onion and garlic and a cheese you like. Yeah, parmesan, but maybe another to mix things up a bit, a nice goat cheese?

I like green eggplants if you'll be frying them first. I like thick, savory red sauce but you may like a thinner sauce, depending on your taste buds.

For a real curve ball add some shrimp!

The shrimp sounds good! I use to make stuffed shells with a shrimp and scallop filling, so good but alot of prep work.
I was even thinking if I grilled it first so its a little more crisp and not wet or greasy then breaded it and cooked it maybe it would be a little firmer but frying would work too.
I like a thicker sauce myself as well.

Let us know what you come up with Nat. I'd be interested to see the final product. Can you get eggplant crispy without frying it? I guess a shake and bake idea would work, but may not be as tasty as fried.

I know isn't it funny how fried food tastes so much better most of the time?
I know the restaurants that I have been to around here just seem to bread and then bake the eggplant and its just so soggy. I like it nice and crisp.
I will try some things out and let you know.
