BANANA NUT BREAD


3 large ripe bananas
1 stick margarine or butter
2 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
Pinch of salt
Chopped pecans or walnuts
Peel, chop, and mash bananas in a large bowl. In small saucepan, heat margarine
until melted; add to mashed banana mixture and thoroughly combine.
Sift flour and stir into mixture. Add sugar, soda, salt, vanilla, and cinnamon,
mix together. Add pecans or walnuts as desired. Grease bottom
and sides of a loaf pan. Pour banana mixture into pan and bake in preheated
325º oven for 1 hour to 1 hour and 20 minutes, or until toothpick
inserted into center of bread comes out clean. Let bread cool completely
before cutting. This is a very dense bread and simply delicious.
