GRANDMA’S HONEY RICE PUDDING   


1 cup rice
8 cups milk
2 cinnamon sticks
8 eggs
1 tablespoon vanilla
1 1/2 cups pure honey
Cook rice with two cups of water in a covered pot over medium heat until
water is evaporated and rice is cooked. Add milk and cinnamon to rice
and bring to a simmer; stir constantly. In a separate bowl, beat eggs and
vanilla together. While stirring eggs, slowly pour a cup of hot milk and
rice into the egg mixture. Add second cup hot milk into mixture. This
will bring up the temperature of the eggs without cooking them. Add
warm egg mixture to pot of rice, stirring constantly. Add 100% pure
honey into mixture, stirring frequently until milk thickens. Allow pudding
to cool and enjoy!
