MISSISSIPPI PEACH SALAD


1 cup pecans – toasted
1 cup grapes
3 large peaches – chopped
2 1/2 cups cooked chicken – chopped
1 cup petit green peas
1/3 cup mayonnaise
2 tablespoons milk
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon tarragon
Mix together mayonnaise, milk, salt, pepper, and tarragon; chill. Chop
chicken into bite-sized pieces and combine with the peas. Add chilled
dressing and stir to mix well. Combine grapes and peaches; add to chicken
and peas and toss to mix. Serve on a bed of lettuce and top with pecans.
Serves 4-6 people.
