WILTED LETTUCE


Fresh lettuce leaves from the garden
6-8 radishes – thinly sliced
4-6 green onions with tops – thinly sliced
4-5 slices salt meat
2 tablespoons vinegar
1 tablespoon lemon juice
1 teaspoon sugar
1/2 teaspoon black pepper
Wash lettuce leaves thoroughly and drain. Place lettuce, radishes, and
onions in a large bowl. In a large skillet, fry salt meat until crisp. Remove
from skillet and drain on paper towel, leaving drippings in skillet. To the
hot drippings, add vinegar, lemon juice, sugar, and pepper; stir well. Heat
mixture until it becomes very hot; immediately pour over lettuce, radishes
and onions. The liquid will sizzle when it hits the cold lettuce. Toss gently.
Crumble the salt meat and sprinkle on top.
