Ladybee' Grilled Eggplant
Summer time is filled great grilling and Eggplant is a wonderful grillable veggie. We love this when we are serving up flank steak or salmon to guests and occationally with barbeque chicken - as long as the chicken doesn't get to saucey.
Ingredients:
2 large black or purple eggplants
olive oil
course salt
garlic pwder
freshly ground pepper
Directions:
Slice 1/2" thick slices LENGTH WISE through the eggplant so that each slice is long and wide - You could cut them ROUND too, but the side slices absorb the oil better and are more appealing and unique.
Mix olive oil, garlic powder, salt and pepper in a sealable plastic bag and place the slices of eggplant one slice at a time into the bag and massage the oil mixture evenly throughout the slices. Squeeze the air our of the bag and seal tight.
Keep the slices in the bag and refridgerated them until ready for the grill. Make sure the grill is clean and brush on some cooking oil to prevent the eggplant from sticking.
Spread the slices out one layer deep on the grill surface and turn after about 1 minute on high heat. Finish cooking on other side until your desired tenderness is achieved.
NOTE: regulate the amount of oil and garlic powered to your liking. Sometimes this is a main meal for a vegatarian and you want to inhance the flavor, increase the garlic powder or use crushed garlic either fresh or jarred
