BUTTERMILK SORBET
WITH STRAWBERRIES
Sorbet:
2 cups low-fat buttermilk
1/4 cup sugar
1/4 cup light corn syrup
Strawberries:
3 cups sliced fresh strawberries (about 1 pound)
1 tablespoon sugar
To prepare sorbet, combine first 3 ingredients in a medium bowl, stirring
until sugar dissolves. Pour mixture into the freezer can of an ice-cream
freezer; freeze according to manufacturer’s instructions. Spoon sorbet
into a freezer-safe container; cover and freeze 1 hour or until firm. To prepare
strawberries, combine them with 1 tablespoon sugar; let stand 10
minutes. Spoon berries into serving bowls, and top with sorbet.
Yield: 4 servings.
