LEMON ICEBOX DELIGHT
Crust:
1 1/2 cups self rising flour
1 stick margarine, melted
1/2 cup of your favorite nuts, finely chopped
Mix and press in a 9 x 13 pan and bake in a preheated 350º oven for
15-20 minutes until light brown; allow it to cool.
First layer:
8 ounces cool whip
8 ounces softened cream cheese
1 cup powdered sugar
Combine and mix thoroughly with electric mixer. Spread over
cooled crust
Lemon filling:
2 cans sweetened condensed milk
3/4 cup freshly squeezed lemon juice
12 ounce container cool whip
Mix together the sweetened condensed milk and the lemon juice
and then add 1 cup of cool whip from 12 ounce container. Spread
mixture over the first layer. Top with remainder of cool whip.
Garnish with fresh lemon slices. Best if chilled several hours before
serving.
