Cilantro Pesto

3 garlic cloves, peeled
2 bunches fresh cilantro, stems trimmed (about 4 cups)
1/2 cup olive oil
fresh lime juice from one lime
1 cup pecans, toasted
1/3 cup parmesan reggiano
1/2 teaspoon salt

Chop all ingredients but the olive oil in a food processor.  Blend oil in as necessary.  Cover and let sit for at least one hour so flavors can marry.  Cut with more oil if you want a thinner pesto or less if you want a paste.  This is really good on chicken or in a quesadilla.
