I soaked a turkey breast and pork roast in brine today. After soaking a couple hours,we were off to the smoker, with charcoal and mesquite chips for smoke.
It has been cooking for about 4 hours when I took this picture.

Looks delicious. Why soak it in brine?

The brine helps the meat stay moist while smoking it.
