Zucchini Nut Cookies (Reduced Fat) by buzzbee

1/2 Cup reduced fat margarine
1/2 Cup Splenda
1/2 Cup brown sugar
2 egg whites
1 Cup grated zucchini
2 Cups flour
1 tsp baking soda
1 tsp cinnamon
1 tsp allspice
1/2 tsp salt
1 Cup raisins
1/2 Cup nuts

Mix dry ingredients in a large bowl. Cream margarine, splenda, brown sugar, and egg whites in med bowl, Add alternately with zucchini to dry ingredients.  Fold in raisins and nuts.  Drop by teaspoons onto greased cookie sheet.  Bake 15 minutes at 325 degrees
