Sauteed Pasta with Tomatoes & Garlic ( Fideos ) by DayValleyDahlias

Really good and FAST!

3 T olive oil
8 ounces coil fideos, broken in half
1 14 1/4 ounce can diced peeled tomatoes
1 cup tomato juice
1 cup water
4 large cloves of garlic, chopped
1 t dried oregano
chopped fresh parsley

heat oil in skillet over high heat, add fideo and saute until brown,about 3 minutes.  Add tomatoes with their liquids, juice, water, garlic and oregano...Cover and simmer til fideos are tender, about 15 minutes stir occasionally, and add a bit of liquid if it evaporates too quickly...

Garnish with parsley...simple!
