1 pound dried soba noodles 1/4 cup asian sesame oil 1/4 cup soy sauce 2 T sugar 1 1/2 balsamic vinegar 2 t salt 1 cup fresh chopped cilantro 8 green onions 3 jalapeno chiles seeded, veins removed, minced 1 1/2 cup lightly salted dry-roasted peanuts coarselt chopped
cook noodles in large pot of rapidly boiling water, just until tender ( al dente )...rince with cold water til cool, drain well. Transfer to large bowl, combine sesame oil, sugar,vinegar,soy sauce, and salt in small bowl, stir to dissolve sugar. Add to noodles. Add chopped cilantro, green onions, and chilies, mix well. May make day before, cover and refrigerate. Before serving sprinkle chopped nuts over salad, mix in.
This is a wonderful recipe. You may omit the 2t of salt, as the soy sauce it salty enough for me...I even use low sodium soy sauce.!
If you want to increase the protein content of this dish as I do, add crumbled tempe...mmmmmmmm good! Oh you can even add a bit of fresh ginger...
