3 pounds lean beef
2 pounds beef suet
1 tablespoon salt
6 pounds apples
4 pounds raisins
2 pounds currants
1 teaspoon cinnamon, ground
1 tablespoon nutmeg
1/2 teaspoon cloves
1 pound brown sugar
1 quart Madeira wine
1/2 pound citron, cut up
Boil beef until tender, and when cold, chop it fine. Chop beef suet and mix
the meat, sprinkling in a tablespoonful of salt. Pare, core, and chop finely
good apples; stone raisins and chop them; wash and dry the currants and
mix them all well with the meat. Season with powdered cinnamon, nutmeg,
and a little mace and a few cloves pounded, and brown sugar. Add the
Madeira wine and citron. This mixture, put down in a stone jar and closely
covered, will keep several weeks. It makes a rich pie for Thanksgiving
and Christmas.
