Beestings Pancakes by TWT

Thought this one was fun just because of the name (us city folk didn't know that "beestings" is another word for animal colostrum - my family spent quite a few minutes trying to figure out how one would harvest those beestings...).

Would be good to substitute honey for the sugar.

Beestings Pancakes

5 cups flour
1 teaspoon baking soda
large pinch of salt/to taste
1 egg yolk
2-3 teaspoons sugar (or 1 teaspoons honey and 1 teaspoon sugar?)
4-5 cups beestings
butter or lard for frying

Mix flour, baking soda, salt, egg yolk, adn sugar in a large bowl. Beat in enough of the beestings to create a batter of the desired thickness. Drop tablespoons of the batter on a hot greased griddle and cook for 4-6 minutes on each side. Serve with rich butter, cream or syrup.

Serves 4.
