Accroding to the brewing seminar we went to (mentioned above) the best yeast to use is from
White Labs
, their WLP720 Sweet Mead/Wine Yeast. Using the right yeast goes a long way to making a smoother mead (or so they told us).

I used a champagne yeast. I just tried my mead again.......I got it on film but I dont think Youtube has processed it yet...As soon as I can I'll let you watch me do it!

In this recipe the answer is yes bread yeast. When you make this recipe you have to forget everthing that you might have learned and forget what you just did when you make something else. I have inlaws that will only drink sweet wines and this one they really enjoy. Note -
IT IS VERY SWEET
