Accroding to the brewing seminar we went to (mentioned above) the best yeast to use is from White Labs, their WLP720 Sweet Mead/Wine Yeast.  Using the right yeast goes a long way to making a smoother mead (or so they told us).

has anyone attempted using orange blossom honey?

Danno- do you really use bread yeast? or do you substitute a real wine yeast?

In this recipe the answer is yes bread yeast.  When you make this recipe you have to forget everthing that you might have learned and forget what you just did when you make something else.  I have inlaws that will only drink sweet wines and this one they really enjoy.  Note - IT IS VERY SWEET
