Thanks to my bees, I have cucumbers coming out my ears. Can someone point me to a simple cucumber relish CANNING recipe (boiling water or pressure cooker)? The ones in the Ball Canning cookbook require bell peppers or some other vegetable, but I want to keep it cheap, with only spices and maybe onions. (Next year I know to grow bell peppers too).

I went ahead and made up the relish substituting more cucumbers for the pepper volume that the recipe called out. It tasted fine by my standards.

That's my kind of standard, when you can't tell Classic Mustard from Spicy during a blind taste test. My taster, along with my sense of smell, is 90% none functioning.
